More delicious than a freshly roasted s’more, it’s toasted marshmallow ice cream sprinkled with graham cracker crumbs and topped with a mini s’more. With this quick and easy recipe you can make your own toasted marshmallow ice cream and put together this yummy treat.
Toasted Marshmallow Ice Cream
1 cup heavy cream
1 1/2 cups whole milk
3/4 cup sweetened condensed milk
1 tsp vanilla extract
7-9 oz toasted marshmallows
Graham cracker crumbs
Miniature s’more
Directions:
In oven on broil toast marshmallows until they start to brown.
In a large bowl combine cream, milk, condensed milk, and vanilla extract. Whisk briskly.
Stir in Marshmallows and then pour into Vitamix (or blender), blend on low increasing to high until mixture is smooth (about 1 minute).
Pour into ice cream maker (I use the Breville Smart Scoop Ice Cream Compressor) and set to ‘ICE CREAM’.
Spoon into a small bowl and top with graham cracker crumbs and mini s’more.
Graham Cracker Crumbs
1 cup graham cracker crumbs
3 Tbsp melted butter
1 Tbsp sugar
Directions:
Mix together ingredients. Pour mixture onto baking sheet and spread out flat and even on baking sheet. Toast crumbs until golden brown. Remove and let cool. Store in air tight container.
