Grapefruit, Blood Orange, and Avocado Salad

This recipe is not just a great Whole30 choice, but also a healthy choice for anytime. With grapefruit and blood orange coming into season it is an ideal meal to put on the table now. Here’s the recipe:

Grapefruit, Blood Orange, and Avocado Salad, 2 servings

  • 1/2 grapefruit, sliced with rind cut from fruit
  •  1 blood orange, sliced with rind cut from fruit
  • 1 avocado, sliced
  •  1 cup mixed greens
  • Micro mustard greens
  • Blood Orange Vinaigrette (see recipe below)

Directions:

Layer and arrange mixed greens, grapefruit, blood orange, avocado. Sprinkle with micro mustard greens and drizzle with vinaigrette.

Blood Orange Vinaigrette

  • Juice of 1 blood orange (about 1/4 cup)
  • Zest of 1 blood orange.
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp sea salt
  • 1/8 tsp fresh cracked pepper
  • 1 Tbsp champagne vinegar

Directions:

Whisk ingredients together and serve. Store in refrigerator.
