This recipe is not just a great Whole30 choice, but also a healthy choice for anytime. With grapefruit and blood orange coming into season it is an ideal meal to put on the table now. Here’s the recipe:
Grapefruit, Blood Orange, and Avocado Salad, 2 servings
- 1/2 grapefruit, sliced with rind cut from fruit
- 1 blood orange, sliced with rind cut from fruit
- 1 avocado, sliced
- 1 cup mixed greens
- Micro mustard greens
- Blood Orange Vinaigrette (see recipe below)
Directions:
Layer and arrange mixed greens, grapefruit, blood orange, avocado. Sprinkle with micro mustard greens and drizzle with vinaigrette.
Blood Orange Vinaigrette
- Juice of 1 blood orange (about 1/4 cup)
- Zest of 1 blood orange.
- 1/4 cup extra virgin olive oil
- 1/4 tsp sea salt
- 1/8 tsp fresh cracked pepper
- 1 Tbsp champagne vinegar
Directions:
Whisk ingredients together and serve. Store in refrigerator.
