Cozy Saturday mornings spent at home cooking for my family are special. I believe there are many ways to say ‘I love you’ and one of those is through a home cooked meal. I think about the times growing up staying at my grandmother’s house. The smell of buttermilk biscuits in the oven and bacon frying on the stove would seep into my senses and wake me up. There’s something very beautiful and nurturing about being woken up by the smell of freshly cooked food. One of my favorite things to cook for my daughter is pancakes, and of course the smaller the better! Pancakes are pretty easy as we all know, but you can make it especially fun for children by making them in different shapes and sizes and with different toppings. Here is my favorite breakfast recipe for mini pancakes with berries, perfect for your next cozy Saturday:
Mini Pancakes With Berries
- 1 cup buttermilk pancake mix (recommended: Krusteaz Buttermilk)
- 3/4 cup water
- 1 1/2 tablespoons unsalted butter, at room temperature
- 1 Tbsp butter
- 1/3 cup sugar
- 1 pint fresh berries (blueberries and blackberries or other type berries)
- 1 Tbsp powdered sugar
Preheat a griddle or large skillet over medium heat.
In a small bowl, whisk together the pancake mix and water until just blended and slightly lumpy. Melt the butter on the griddle. For each pancake, add 1 tablespoon of batter to the griddle. Cook for 1 to 1 1/2 minutes each side until golden brown.
Meanwhile in another skillet, heat and melt butter then add sugar and berries. Saute berries for about 7 minutes on medium heat.
Plate mini pancakes top with syrup and berries then sprinkle with powdered sugar.
