Once again another American reason to dive into a platter of wings or cheese dip (as if there wasn’t some new reason every week:) Maybe you are trying to keep a New Year’s resolution, maybe you are looking for healthier options, maybe you want to eat more like Tom Brady and Gisele or maybe after decades on this earth you are just a bit bored of the same old food served at the same old occasions leaving you feeling the same old bloated way. If you are looking for food that is easy, delicious,and beautiful here are 5 recipes to cheer about this Sunday.
Eating something tasty and healthy could not be easier than this- a big beautiful platter of fresh veggies and a store bought package hummus. The Whole Foods Original Hummus is out of this world delicious. It is so creamy and so tasty. Paired with this smorgasbord of veggies, this large hummus platter costs under $12. A win for your taste buds, a win for your health, and a win for your pocketbook.
Here’s the veggies I chose for the platter:
1 Watermelon radish
1 bunch of radishes, sliced
1/2 jicama, sliced
1/2 bell pepper, sliced
1 head broccoli, cut into bite sized pieces
1 endive, separated
4-5 soft pitas, cut into triangles
Yum, is all I have to say.
1 16-ounce can vegetarian refried beans
3/4 cup Vegan Valley Jalapeño Cheeze Sauce
1 cup guacamole (store bought or recipe below)
1 cup Pico De Gallo (store bought or recipe below)
1/2 yellow or orange bell pepper, diced
1/4 cup black olives, diced
4-5 fresh sprigs cilantro, chopped
Directions:
Layer all ingredients in order and serve with tortilla chips.
Guacamole
2 ripe avocados
juice of 1 lime
3 slices jalapeno, finely chopped
Salt to taste
Directions:
Place all ingredients in mortar and pestle and mash.
Pico de Gallo
3/4 cup tomatoes, diced
1/4 cup red onion, diced
7-10 fresh sprigs cilantro, chopped
1 Tbsp lime juice
Salt and pepper to taste
Directions:
Combine in a food processor and chop.

Cactus, also called nopal, is promoted for treating diabetes, high cholesterol, obesity and hangovers. It is also touted for its antiviral and anti-inflammatory properties. I roasted the cactus with corn and jalapeños then topped with avocado, pico de gallo, and lime-cilantro slaw. RECIPE HERE.
